Serves: 10-15

Total Time: 20-25 minutes
Ingredients:
5 small onions, thinly sliced
1 Tablespoon butter
3 - 14 ounce cans Swanson's low sodium beef broth
3 - 10 ounce cans Campbell's beef consomme
1/2 - 1 cup water (to reduce richness)
1 packet Lipton's onion soup mix
10-15 slices French bread, about 1 inch thick
1 1/2 cups shredded Gruyere (or Mozzarella; a slice of Swiss cheese also works!)
Directions:
1. Combine onions and butter into a skillet and brown until tender (cook for approximately 20 mins. on medium heat).
2. While onions are cooking, combine broth, consomme, water, and soup mix in large pan. Cook on HIGH setting for 15-20 minutes.
3. Add the onions to the broth.
4. a) Option 1: Ladle soup into serving bowls. Top with a slice of French bread. Sprinkle cheese over each bread slice. Put soup bowls under broiler until cheese is melted.
4. b) Option 2: Place the bread on a baking sheet and top with cheese; broil until cheese has melted, about 30-40 seconds. Set cheesy bread on top of soup, just before serving.
